Smoked salmon omelet

What I am sharing with you today is not really a recipe, just a quick put together lunch idea to treat your self to a little something special. I was alone most of this week which means that I get to treat my self to a little something special to make up for that. Tiramisu or caramel pecan turtle cheesecake from the cheesecake is a must but this time I also got some smoked salmon. Not really sure why but I have been craving it recently, I went 4 years without eating any but it has come back to my mind recently.

The first thing I made was obviously put it on a bagel with some whipped cream cheese, but I was looking for something a little healthier. This is when I remembered the my sorrel was looking a little droopy so was begging to be use. If you never had sorrel you should totally give it a try, especially with fish or eggs, it's a little sour, absolutely delicious, cut through the richness. I use to love it as a child and had not had it since then, so I bought some seeds online, I also saw some in the grocery store recently.

Here we go: Smoked salmon and sorrel omelet
Ingredients (1 entree)
- 2 eggs
- 1 tbsp milk
- handful of sorrel, roughly chopped
- 2 slices of smoked salmon, roughly chopped
- salt & pepper
- 1/2 tbsp butter

Instructions

Whisk the eggs and milk thoroughly, season.
Melt the butter over medium heat in a small saute pan, pour the eggs mixture, top with salmon and sorrel.
Cook until set (it will not be fully set) and brown at the bottom, watch out not to burn it.
Flip and sear quickly, it will take a few seconds.
Enjoy!
